Chill Con Carne With Goat Meat

An incredibly sumptuous dish using high protein, low in saturated fat, goat mince. Most of the herbs and spices should be in your cupboard however easily purchased from any reputable supermarket.

Serves: 3 – 4 portions

Ingredients
15g Rapeseed oil
400g Minced goat meat
21g Crushed garlic
190g Small diced red onions
94g Small diced celery
55g Small diced red pepper
30g Small diced green pepper
1&1/8 tsp Ground sweet paprika
2 tsp Ground cumin
3&1/2 tsp Mild chilli powder
1&1/4 tsp Dried oregano
½ tsp Dried parsley
¼ tsp Salt
5g Fresh coriander
250ml Water
400g Tomato passata
15g Lamb stock cube
1 tsp Lime juice
20g Dark chocolate 50% solids
150g Black beans (Tinned cooked)

Method

1.

Fry minced goat in oil until lightly browned

2.

Add garlic, onions, red peppers, green peppers & celery

3.

Continue to fry, add all spices, salt & herbs stir thoroughly

4.

Add water, passata, lamb cube & lime juice

5.

Bring to the boil

6.

Place in the oven for 45 mins @ 180°c fan

7.

Then take out of oven, add black beans

8.

Place back into oven cook for a further 20 mins

9.

Take out of oven check meat is cooked

10.

Add chocolate – Adjust seasoning if necessary, then serve.

You can purchase your goat mince meat from our website, all other ingredients should be in any big supermarket.
