This goat meat recipe will take you back to your summer holidays, fresh and extremely tasty ingredients to match your flavoursome goat meat.

This recipe serves 1, simply ramp up the ingredients by the number you intend to serve. I know it’s hard, but it’s nice share your goat meat leftovers sometimes!!

Ingredients

Goat & Pasta 
1 tabOlive Oil
80gPasta (Penne or Fusilli) – cooked
10gSliced baby sweetcorn
15gSmall strips of carrot
15gSmall strips of yellow pepper
11gSmall strips of red pepper
6gSmall strips of French beans (pre-blanched)
40gDiced cook goat (Leg or Shoulder)
104gFruity tomato & orange sauce
Fruity tomato & orange sauce (serves 3-4 portions)
14g Olive oil
10g Fresh crushed garlic
30g Small diced red onions
61g Water
240g Tinned chopped tomatoes with juice
180ml Water
1/8th tsp Dried oregano
1/8th tsp Dried parsley
¼ tsp Dried basil
1/8th tsp Ground black pepper
5g Lamb stock cube
34g Tomato paste
1/8th tsp Caster sugar
2g Orange zest (chopped)
20g Fresh orange juice

METHOD

Goat & Pasta Mediterranean
1.

Heat oil in a pan then add all vegetables stir fry for 3-4mins

2.

Add pre-cooked meat & pasta

3.

Add fruity tomato & orange sauce bring to the boil 

4.

Add fresh basil, serve with grated parmesan cheese over top

Fruity Tomato & Orange Sauce
1.

Heat oil in a pan add garlic, onions & 61g water 

2.

Cook until water has almost evaporated

3.

Add tomatoes,180ml water, lamb cube all herbs & spices

4.

Add tomato paste, sugar, orange juice & zest

5.

Bring to the boil & simmer for 15-20 mins

6.

Adjust seasoning, serve with goat & pasta Mediterranean

Tip

Any leftover sauce can be frozen for another day!
