MOROCCAN GOAT TANGINE Recipe

This Moroccan goat Tagine recipe is beautifully balanced with strong, aromatic and fragrant flavours you would expect from a delicious tagine. It’s also a simple goat meat recipe where you can leave the oven to do most of the work.

Serves: 3 - 4 Portions
Ingredients
9g Rapeseed oil
480g Diced goat meat
9g Rapeseed oil (2nd Oil)
150g Small diced red onions
11g Finely chopped fresh ginger
68g Small diced celery
12g Crushed garlic
1 tsp Ground coriander
¾ tsp Ground cumin
½ tsp Ground turmeric
1 tsp Ground sweet paprika
1/8th tsp Ground cayenne powder
1 & 1/8th tsp Ground cinnamon
¼ tsp Dried mint
3g Fresh mint
1/8th tsp Salt
23g Tomato paste
20g Lamb stock cube
2 tsp Harissa paste
450g Tinned chopped tomatoes in juice
180ml Pomegranate juice
65g Chopped dried apricots
65g Chopped dried dates
90g Chick peas (tinned cooked)
Method
1.
Fry goat meat in oil until lightly browned
2.
Remove meat add 2nd oil, celery, ginger, garlic, onions
3.
Add all spices, & herbs, return goat meat
4.
Add harissa paste, tomato paste, salt & water
5.
Add lamb stock cube, tomatoes & pomegranate juice
6.
Add dried fruits bring to the boil, place in oven @ 180°c fan for 45mins
7.
Take out of oven, add chickpeas, place back in oven cook for a further 15-20 mins
8.
Remove from oven check if meat is cooked adjust & serve
